This veritable speciality is a great expression of the quality, elegance, and finesse of the Nino Negri winery. It is a very special sparkling wine that has been produced in extremely limited quantities since 1979. It is dedicated to Carlo Negri, the founder’s son and one of the first Italian oenologists. Produced using the metodo classico process in Nino Negri’s own cellar.
Fine and consistent perlage. Refined and well-orchestrated nose with clean bready notes and pleasant hints of apples and laurel leaf. The dry, full, flavoursome palate is long, clean and very elegant.
As an aperitif and with all delicate foods (except cakes and pastries).
Local and international white grapes.
The wine is fermented off the skins, which are immediately separated from the must, at controlled temperatures with cultured yeasts.
